Danish Potato Salad with Dill
Makes: 6 servings
Ingredients
- 1/4 c Green onion, minced
- 1 pound potatoes
- 1 c low-fat plain yogurt
- 3 t light mayonnaise
- 1 t curry powder
- 1 t Dijon mustard
- 1/3 c fresh dill, chopped
- Freshly ground pepper
- Watercress (for garnish - optional)

Preparation Instructions
Wash potatoes and cook in large pot of boiling water
until tender. Drain and let cool slightly; peel only
if skins are tough and cut into thin slices.
In bowl, mix together yogurt, mayonnaise, onion, curry
powder, mustard and salt. Add potatoes, dill, and pepper
to taste; stir gently. Garnish each serving with watercress
(if using).
Note: Dijon mustard and fresh dill add extra flavor
to this summer salad. If fresh dill isn't available,
use 1 teaspoon dried dill weed and 1/2 cup chopped fresh
parsley. |
