Mexican Vegetables
Makes: 4 servings
Ingredients
- 1 c cucumber, chopped with peel
- 1 can (8 3/4 oz)
corn, low sodium, drained
- 1 can (16 oz) tomatoes,
stewed, low sodium
- 2 T red wine vinegar
- 1/4 t cilantro, dried
- 2 T red pepper, chopped
- 1/2 t garlic
- 2 T green pepper, chopped
- 1/2 t cumin
- 1/8 t pepper, ground
 Preparation Instructions
Combine all ingredients in large serving bowl. Mix well.
Serve cold.
