Pineapple Poppy Seed Salad
Makes: 4 servings
Ingredients
- 1 Fresh pineapple
- 2 Kiwi fruit, peeled and sliced
- 2 Bananas, peeled
and sliced
- 1 c Strawberries
- 1 c Melon cubes or balls
- 1/2 c Pineapple juice (for
Dressing)
- 2 T Lime juice (for Dressing)
- 2 T Honey (for Dressing)
- 1 T Poppy seeds (for Dressing)
- 1 t Lime peel, grated
(for Dressing)

Preparation Instructions
Cut pineapple in half lengthwise through crown. Cut
fruit from shells, leaving shells intact. Cut pineapple
into quarters. Trim off core and cut fruit into chunks.
Combine pineapple with remaining fruit. Toss with Poppy
Seed Dressing. Marinate at least 15 minutes for the most
delicious flavor. Spoon into shells to serve. Pass extra
dressing to add to each serving if desired.
Poppy Seed Dressing Preparation
Combine all ingredients. Whisk to blend.
