Rainbow Salad Rothschild
Makes: 5 servings
Ingredients
- 2 c frozen corn, defrosted
- 1 can (15 - 16 oz) black
beans, rinsed and drained
- 1 Tomato (medium), chopped
- 1 Onion (medium), chopped
- 1/3 c Balsamic or other
flavored vinegar
- 4 T Fat-free blue cheese salad
dressing
- 2 T Fresh cilantro or parsley, chopped 3 T Asiago
or Parmesan cheese, grated
- Salt and freshly ground
pepper to taste

Preparation Instructions
Combine ingredients in large bowl. Allow to marinate
at least 30 minutes before serving.
